Last weekend was our friend Nick's birthday, and since he threw his wife Amanda a surprise party back in 2011, she decided to return the favor this year. It was a beautiful little dinner party in a pavilion overlooking Toguchi Beach with just their closest friends. Although it was a bit chilly (it IS January!), we couldn't have asked for a prettier evening, with a gorgeous sunset and clear night sky. Amanda did an amazing job at setting up the beach-themed party, complete with seashells, lanterns, wine & candles everywhere. Our dinner consisted of fresh salads, grilled steaks, tuna, sweet potatoes & grilled pineapple with cinnamon (YUM) for dessert - courtesy of our friend Cam, who was the designated griller (I know, not a word) for the evening!
After dinner, we had some fun celebrating Nick's birthday by lighting Thai paper lanterns and letting them float away into the night sky over the ocean. They are beginning to be somewhat of a tradition among our friends, and they are so beautiful to watch! These are the evenings that we are truly going to miss when our friends leave Okinawa - good food, good conversation, good fun, and good company.
